Did you know that vegetable oil is not made from vegetables? Yeah, so what is in it? And what’s a boy to do to find healthy cooking oil? Well, today we’re gonna talk about vegetable oil, Crisco (shortening), olive oil, lard, coconut oil, and avocado oil. We’re gonna see which ones are “Dennis approved” and which ones “should be removed”. So, hang on to your horses, and let’s get started.

1. VEGETABLE OIL - SHOULD BE REMOVED
- Could be any of soybean, canola, corn, sunflower, or safflower
- Vegetable oil is a lie
- Highly-expelled, rancid, unstable fats
- Highly-refined of any micronutrients
- Contains high levels of pesticides/herbicides
- These are empty fats that are adding to your daily calorie count while depleting your micro-nutrient stores (also known as your vitamin and mineral stores).

2. CRISCO/SHORTENING - SHOULD BE REMOVED
- Hydrogenated fat is bad
- Studies indicate that fully hydrogenated oils are likely highly carcinogenic—meaning they are potentially a major cause of cancer
- In 2015, the FDA banned partially hydrogenated oils in the US because they cause heart disease. I’m not gonna wait around another 70 years for the government to finally realize that this laboratory created concoction is also bad for you to eat.
- Artificially chemically altering the molecular structure of the oil
- Butter is a perfect substitutes like 99% of the time
- Non-hydrogenated palm oil shortening is fine (or maybe try using lard)

3. OLIVE OIL - DENNIS APPROVED(ish)
- “Organic, extra-virgin, cold pressed” is good for you
- Ideally olive oil will be sold and stored in tinted glass
- Good olive oil is usually gonna be pretty pricy
- You’d be better off buying cheep butter than cheep olive oil
- Olive oil should mostly be eaten raw

4. LARD/BACON FAT - DENNIS APPROVED
- Natural: lard is the animal fat derived from pigs
- Bacon fat is simply the lard that cooks out of bacon (cuz bacon is pig)
- Fantastic source of vitamin D… super bio-available
- Helps your immune system in the winter
- Very heat stable (smoke point is over 350º F) and mild flavor making it perfect for deep frying, pastries, and general cooking
- I always keep a pound or two of lard in a deep cast iron pot on my stove. That way it’s super accessible while I’m cooking meals if I want a quick spot of oil. And I can very easily make some french fries or other fried food without going through all the trouble of preparing a pot of oil every time and cleaning it afterwards. I usually change the lard out every couple weeks once it’s been used for frying about 6–7 times.
- Lard is very cheep, but isn’t widely available.
- Trying talking to your local butcher store to see if they sell lard
- Check ethnic stores (Chinese or Mexican markets)
- Or talk to the farmer that you get your grass-fed, antibiotic-free meets from.

5. COCONUT OIL - DENNIS APPROVED
- Hard to go wrong
- Highly-stable (high smoke point)
- Even refined coconut oil is fine
- Among other benefits, studies show that coconut oil can be very helpful in preventing and reversing Alzheimer’s disease and improving brain function overall

6. AVOCADO OIL - DENNIS APPROVED
- Highly-stable
- Refined is fine
- Mild taste
- Good for making mayonnaise
- Kinda expensive, but becoming widely available. Thanks in large part to the brand Primal Kitchen who is making lots of convenient avocado oil products like this healthy cooking spray and mayonnaise.

    great advice! i personally use avocado oil, beef tallow, duck fat, & butter from grass fed cows depending on what i'm making.

    I think clarified butter is the healthiest of all things to cook with! Plus it has a super high smoke point!

    Thanks Dennis. I am a south asian and we cook alot of oily foods, literally everything is cooked in oil. So if I were to keep it in budget and healthy, I should go for refined coconut oil ? this would work deep frying too ?
