I have a problem: most pieces I hear end the phrase in a V chord. It's the problem in the video when it ended on the G note (dominant of C).

Did you mean that the root chord or ending chords are the key then they are followed by their family chords?

how do you find the difference between major and minor for the method where you find the note that feels at home?

is it possible for a song to have multiple keys ? eg ... like the verse and chorus have different keys ? .... if so does that mean we have to take each block and work out the key to each, one at a time ?

crazy but you can use a chromatic tuner to "listen" to the notes, but if it's a busy song like most songs use the hum method then hum the tone to the tuner.
