pro tip: if you dont have a ricer like they do you can easily use the fine side of your cheese greater, it works just fine but you might wanna peel the potatoes and not scoop them out so you have something to grate ;)

I give you an advice beacause it's our cook speciality, but take old potatoes, that are not really hydrated, but more dry. So you can with this add less starch and they will have more the taste of potatoes!
