I like your command tutorials it helped me with creating my own zombie boss but something I realized here in this vid is you used a lot of commands for just setting up the boss. What I like to do is use a structure block with a mob that I put anything I want on it even custom enchanted items then just save a structure with the name of the boss. Then you can summon it in right away with the structure command.
