10 minutes Fish and Chips. (batter, crispy fish, skinny chips, tartar sauce, lemon slice) Batter: (slight runny consistency, just dropping through whisk) Self raising flour (120g) Baking powder (tsp) Curry powder (colour) Ice cold beer Aerated egg whites, whisked 3/4s(touch of salt not too early) Crispy fish: Cod fish slice Lightly season Into self-raising flour touched with curry powder Knock off excess flour Coat/dip completely in batter Shallow fried (3-3.5 mins) Finish in the oven for crispy finish (2 mins) Skinny chips: Dry potatoes, rid of starch and moisture (rub with paper towel) Shallow blanch (touch of cold oil to reduce oil temperature) Shallow fry (crunch and colour) Touch of salt Pat them dry Tartar sauce: Crème fraîche Mayonnaise Gurkins (diced) Tabasco (touch of heat) Salt (touch) Shallots (chopped) Squeeze of lemon Serve with slice of lemon. Oil temperature control: Shallow fry, splash of cold oil if frying oil gets too hot
