    Update: Matpat has mysteriously disappeared from him home and in his place is a apology note saying he was wrong and a box of KFC. Matpat has never been seen again

    I’m not surprised the citric acid made the 99-X taste more similar to KFC. Citrus is such a great chicken additive that definitely improves the flavor especially when fried/baked.

    maybe the 99-x, plus the citric acid, PLUS the tellicherry pepper mentioned at the pressure cooker manufacturer interview wouldve been the perfect combination

  • So fun fact: here in Brazil (and maybe in other countries in South America, idk), using fruits like lime to spice up chicken is very common, and it is delicious
  • The reason for kfc not being in finland is that in finland you have to tell EVERY SINGLE ingrediant and the amount of them.

    Looking back now i think the reason why some of the chicken didn't come out as flavorful (like the nephew recipe) was probably because Mat and Steph never marinated the chicken before frying them

    I would love to see this AGAIN... but with another twist... blindfolds, since the brain tend to be a bit biased sometimes, so do all the flavours, get them randomized and then try them blindfolded :D
  • here's my food theory: the last recipe you tried with the citrus added to it is the true recipe, BUT because it was made in a small kitchen deep fryer instead of an industrial sized pressure fryer it was slightly different. The other reason behind it tasting different is because KFC is made by sweaty teenagers in a rushed environment that isn't always so clean just gives the chicken that extra oomph that it has.
  • I remember a friend of mine from America came over to visit me (I live in Scotland), and their favourite thing to do was to eat at fast food restaurants because they're allergic to soy, and we don't use soy oil over here! To elaborate, in the UK, we use vegetable oil, sunflower seed oil, or just plain old butter to fry things as its harder to get soy over here.

  • So fun fact from someone who has worked at multiple kfcs in the US at least the extra crispy is cooked in an open vat deep fryer while the original breading is cooked in a pressure fryer and they're two different types of breading

    I was a manager for a Corporate KFC. The “Special Ingredients” are purchased from 2 different companies. By contract, neither company, is allowed to deal with each other, in any way. Also, the special ingredients are VERY EXPENSIVE to buy for what it is. It truly is, still a secret. The truth is, it really is the ingredients along with the method of cooking. Pressure fryers really PUSH that flavoring DEEP into the chicken. Even if you got your hands on both flavor packets, it would be near impossible to get everything right. You can get close, but not exact. That secret is held by two different companies, and neither know the full combination.
