    If the bottom of the bread is too moist when you remove it from the parchment paper, just put it back in the warm oven, upside down without the paper, on the rack for 10-15 minutes. This will help it dry.

    Erin, oh my gosh, right?! I tried this about 3 weeks ago...made cheese fingers with it (with bacon bits too-haha!) with a 0 carb mayo-sweet chili dip...and I thought it was like a Grecco special here in Canada! hahaha! I love this bread & you're sooo right! It's incredibly versatile! I love your sincerity & excitment over it & us keto-ers have a lot to be excited about with regard to this game changer for meal preps! :)
  • BREAD - totally, absolutely, utterly my addiction. Purchasing cottage cheese now to try this recipe.
  • Made it yesterday but added 1 tbl egg white powder and 1 tbl collagen. Ate 1/2. Today I baked it again to crisp it up a bit for 15mins and then crumbled over a cooked rissole, mashed 1/2 avocado and drizzle of Greek yoghurt. Ooohhhh YUM.

    Ricotta cheese is just a bit lower in protein than cottage cheese with higher fat for more satiety so I don't understand why people don't combine the eggs, ricotta AND cottage cheese? It works...!

    Just made it today! It was good!! I’m gonna make it again. I used half the recipe and baked it in an 8x8” pan. I will be making it again. 😁😁😁

    I'm thinking of making this but maybe doubling the recipe and putting it in a smaller baking dish to make it thicker, instead of paper thin for focaccia. I will probably have to cook it longer. What do you think if I add some nutritional yeast to give it more of a bread taste?
