Just did some research on keeping parm un-moldy. Was advised to dampen paper towel with vinegar then wrap cheese and pop in baggie and seal airtight. Parm is so pricey and can't bear to see it get wasted anymore.

She is right. If you notice when you purchase sliced cheese from the deli, they wrap in wax/parchment paper and put in a ziplock.
