What to do with cheese and potato? Get freaky and try out Frico Friulano! This is a typical recipe from the cucina povera the Italian humble cuisine which is known for creating magical tastes with only few ingredients. This dish originates from northeast Italy, Friuli Venezia Giulia region, where the heart of this recipe, Montasio cheese, comes from. Delicious and full of taste, great starter, side dish or the main course - let's cook!

Ingredients for 2 main course or 4 starters:
- 200g Montasio cheese (or other kind of cow milk cheese)
- 1 onion
- 500g potatoes
- Salt and peppar
- Olive oil

How to:
1. Peel the potatoes and grate them raw on the large holes of a box grater.
2. Grate the cheese on the same holes of the grater.
3. Chop the onion to small cubes. Heat a frying pan with a splash of olive oil and throw in the sliced onion.
4. Add potato, salt and peppar and mix for one minute.
5. Add the grated cheese and mix. Lower the temperature, cover the pan with a lid and let the mixture slowly fry for about 10 minutes.
6. Flip the crisp with a help of a plate and let the other side fry for about 5 minutes until golden brown.
7. Place the Frico Friulano on a plate and enjoy!

Buon appetito!

That's new! Interesting! What can be used instead of the Montasio if I can't find it?

I've tried this twice. Both times it was a wet, oozy mess before the cheese was added. How do you keep the onion/potato dry enough?

Hello Alessandro. My question is why not prepare this in a pan? Seems easier to flip in a pan.
  • well... mine burned even tho i had it on a low flame 🥲 (still tasted good)
