Recipe:
1 cup of Heart Balance Oil and 1 cup of Bertolli Olive Oil
Allow to heat in frypot until temp reaches 165 degrees
Fish Breading:
1 cup of Italian bread crumbs
1 cup of Panko crumbs
1/3 cup All purpose flour
1/4 cup Brown sugar
1 teaspoon of dried dillweed
1 teaspoon of crushed red pepper
1 teaspoon of cayenne pepper
Mix all well
Fish Marinade:
1/2 stick of melted butter
Add 1 teaspoon of Spicehunter Seafood seasoning
1 cup of Simply Peach Juice
Mix all well then marinade the cod fillets for at least 1 hr
Frying:
Dredge the fillets completely in the breading make suring to press the breading very well into the cod fillets until it forms a solid crust on each. Once temp in fry pot has reached 165 degrees you can drop them and fry for about 5 to 7 minutes or until the meat flakes with a fork.
For the Buns:
Wrap in paper napkins and steam in your microwave for 30 secs. Don't steam too long or they can get hard around the edges. Complete your fish sandwich to your preferences. We added a slice of sharp cheddar cheese, tartar sauce, ketchup and lettuce.
