I like pinakurat and sukang iloco but what brings back childhood memories is plain datu puti or silver swan vinegar with salt and chopped fresh garlic. :)

Since you have lots of vinegars now, why not cook your own version of Adobo? You just need to add soy sauce, garlic and bayleaf.

19:12 they recommend that vinegar for general use like for making adobo or pickling or making Paksiw.

hope u can find homemade suka (made of coconut) in karenderyas. full of garlic and chillis those are the best for me :)

Also, there are even better vinegar mixed spices in each houses, where they put lots of chillies, ginger, garlic, onions and etc.. like a looot of it in a bottle. I do that too. Home made. Better than any other commercial brands. You can buy a coconut vinegar for about $1.50 a gallon in the street. Then you put all spices. Maybe try to do house hunting in each provinces. You would know a very good coconut vinegar if the smell covers the floor of its smell. 😅

Go visit a province where locals sells coconut vinegar in the street. You can also taste their coconut wine called "tuba".

Go up north Ilocos region and try the Sukang Iloco.
