Today I am making cheesy ground beef enchiladas my favorite way, baking in the oven. The homemade enchilada sauce gravy and the cheese make this a baked comfort food my family loves. I am also making a pan of Mexican rice and a salad to make this a delicious enchilada dinner.

INGREDIENTS
1 lb ground beef (I used 97/3 lean to fat ratio)
1/4 cup diced onions
2 garlic cloves minced
1/2 tsp ground cumin
1/2 tsp salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or Colby jack cheese)

ENCHILADA RED SAUCE INGREDIENTS
1/4 cup oil
4 tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Knorr brand chicken bouillon cube
2 cups (16 oz) water
**You can substitute the bouillon cube and water with
2 cups of chicken stock or broth
**If using chicken broth, be sure to adjust salt and seasoning to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

I'm 60 and am my wife's caregiver and I'm always trying to mix things up in providing us both with tasty and creative homemade meals that are not only healthy, but DELICIOUS! I found your channel while looking up how to make flour tortillas and I must say, your grandma would be proud of me! My wife sure enjoyed them! I'm going shopping tomorrow and will be picking up these ingredients and plan on making this dish you have on this video for us tomorrow evening! Plus, we have a HUGE snow storm that will be bringing a foot + of snow starting tomorrow after midnight, so Thursday, while it's snowing all day heavily, I will be doing even more cooking!   • I’m Hispanic from south texas and was taught to roast the flour in a hot skillet without any oil until it’s brown than add the broth and spices. The roasting of the flour gives the sauce a unique flavor.

    My tia use to make these for my birthday for many years straight. I never cared for the big party she’d make for me. Her love was more than well felt. At the end my favorite part was knowing she’d make my favorite enchiladas, ever! When she passed nobody really knew how to make them since it wasn’t a house favorite👎 I’ve visited many restaurants and they are rarely on the menu. And when they are they are just not “it”. Thanks for your recipe. I’m extremely looking forward to this 🎊

  • I made these & only changed the flour in the sauce (I had to use GF flour). Before baking them the enchilada sauce tasted a little flourish but after baking that taste was gone. THESE ARE THE BEST ENCHILADAS EVER! Tonight I made the Mexican Rice to go with them and I feel like I am at my favourite Mexican restaurant, but better! Thank you so much!!!

    I've made this at least 3 times. I can't get over how delicious this sauce is. I will never buy the canned again!! You're awesome! I didn't think these could be better, but I paired it with your red salsa omg!! I used 7 of the chili de arbol perfecto!!!
  • First time making enchiladas!! I got tired of wanting enchiladas from one of my favorite Mexican restaurants and not being able to have them because of the quarantine...so I looked it up and your tutorial seemed so simple that I had to try it out!! I’m so happy I did. The taste was just what I was looking for to satisfy that craving I had. With some more practice...I’ll be a pro!!😅 One thing I noticed was that these do dry up when reheating so making an extra batch of enchilada sauce is encouraged... I’ll make sure i’ll make some next time!!! Thanks 😊
