I'm something of a vegetable addict: I can't get enough of my daily veggies. However, that wasn't always the case! I used to hate vegetables.

That is, until Eva showed me the light. But you can't go from Hot Pockets to steamed broccoli rabe all at once. That's why today, Eva's sharing some examples from a category of vegetable dishes that helped me in my journey. They're delicious for everyone, whether you're a veggie lover or hater.

They're... STUFFED vegetables.

    I had a friend here in Mexico who said he hated spinach. I took some fresh leaves and put them in a frying pan with butter salt and pepper and a pinch of nutmeg and cooked it over high heat til all the water evaporated. They were bright green and delicious. My friend loved them and eats veggies to this day. One only needs to eat fresh veggies properly prepared to maximize the natural flavors.

    I grew up on a farm in Maine, we had a huge garden, fresh vegetables every summer and canned ones year round, not only are these dishes delicious but healthy, prolonging your life , detox your body from hot pockets and eat zucchini pockets , new york

  • When I went vegetarian back in 1992, I went into with a passion. I got recipes, and I specifically went out looking for ingredients that I had either not heard of or had ignored. I discovered a whole new world of flavors, and 32 years later, I am still anxious for new discoveries. Along the way, I also learned that I did NOT in fact hate spinach, eggplant, and other foods that I thought I hated. I learned that I had been subjected to culinary abuse in my formative years. So yes, I still hate those foods the way they had been served to me in my childhood, but I love them when treated well. I still don't like raw tomatoes, but cooking produces a total transformation.

    This is a staple food in Greece. Suffed tomatoes and peppers. We eat this dish with yogurt. YUMMY!

    My favorite Roman food memory (from 40 years ago) is eating amazing rice-stuffed tomatoes in a tiny tavola calda while the owner's enormous dog lounged under the table adjacent to us. So good! And then of course there are the Roman artichokes. Hmm, these are tied with the stuffed tomatoes. Eva, Harper: please show us how to make Roman artichokes?! I'm with Eva: fresh zucchini are delicious in all of their forms! My mom used to fry slices of zucchini in EVOO. No breading. Just slices of garden-fresh zucchini fried in olive oil and sprinkled with salt. Eat with a slice of good bread. Heaven.

    🤔 Every time you come back from visiting Italy, Harper's Italian improves, and Eva's English pronunciation deteriorates. I am completely charmed. Or is it just me hearing things?
  • It's your vegetable-based content that I return to again and again. That one chard recipe alone was a game changer. I planted an insane amount of chard this year because of it! I sure would love to see another breadcrumb episode.

    This brought me back to Rome circa 1970 where my sister used to make the stuffed tomatoes, alla Romana, during summers. Thanks for bringing such great memories Eva.

    Stuffed peppers! My Italian grandma would make this often as well as stuffed cabbage. Pumped for this show...this is the best channel!
  • I'm Greek, and the favorite comfort food my grandmother would make was stuffed peppers, I'm remember eating it for lunch on rainy summer days after coming in from running around in the park. Great times.
  • Those stuffed peppers look so delicious! My Mom made stuffed peppers with ground meat and rice when I was small, but I love this idea of vegetable stuffing even more! Thanks for the inspiration!

    Stuffed veggies are amazing. I grew up on stuffed peppers - probably more Slovakian than Italian in preparation, but I loved them then and love them now!! Stuffed cabbage is amazing too.

    The paprika's stuffed with aubergine and bread looks great. Wery Niza. Zucchini: you can cut them in strokes Au Chinoise. Then blanche them shortly. Add other similar veggies and at the end you add 'cooked' Cous Cous. Now you can serve it warm or as a salat by adding a French dressing or vinagre/aceite. The aubergine can be place on your stove in open flame. Keep turning until the aubergine is cooked. Then cut in half and scrape all out. Including the burn parts. Now you can add red unions, red wine vinegar, olive oil, pepper and salt. Serve cold as a spread on crispy bread toast.

  • This is how you get kids to eat veggies. The first thing I learned from my cousins Italian Grandparents was twisting pasta in a spoon and 7up with wine. Great times. 💚🤍❤
