ANCIENT BRITISH SEED CAKE
TO BEGIN:
Heat oven to 325° F
Line largest spring-form tin with butter papers

CREAM UNTIL FLUFFY:
1# of softened Butter
350 g Caster Sugar (I make my own by whirling white sugar in blender to a finer crystal —not powdery, however, if possible)

SIFT IN & MIX:
450 g flour
Mace —to desire
Nutmeg —to desire

ADD IN:
2 Tablespoons, each, of any or all seeds—
Poppy seeds,
sesame seeds
Pumpkin seeds
Caraway seeds
Anise seeds
Flax seeds
Sun fower seeds
Chia seeds
50g chopped Crystallized citrus
Almonds, ground amount is up to the baker😃, (I might put in a little less than a cup, but I don’t think it is needed at all if unsure)

ADD IN & BEAT 3 MINUTES:
6 eggs
200 ml Brandy or Wine… (or Milk)
Only if someone had brought, as a gift to Yankee, do I use alcohol in cooking & baking. However we take a stand against making a purchase from the drug & alcohol industry. Even cooking wine is made by and profits these rascals. So milk will, they say, be very good to use in place of supporting the liquor manufacturing.

TA DA!
Put mixture into butter-paper lined Spring Form.

Bake 1 & 1/2 to 2 hours, until toothpick comes out dry & cake is well risen, firm & golden brown

We enjoy with nibbles of sharpest Cheddar we can get!

Victoria, I LOVED this video - for so many reasons. The seed cake looks delicious, and yes, I am endlessly fascinated by the tidbits you share - like about mace and rice cups! Other details were so dear. You talked about being wee tiny. I haven’t heard that term since I left Canada and married a Texan 50 years ago. After a while, I stopped describing things as “wee tiny,” but I will pick it up again, and think about you fondly as I do! Then, I was so delighted to hear you talk about using your “doodaddery” (just how shall we spell that?🥰) to mend your tea towels. I am all about using my doodaddery in paper arts now. Nothing wasted! Enjoy the yummy cake!!!

Victoria do you have a video of the inside of your home? I would love to see it. Do you still have the carriage house? That was a beautiful piece of property. The home looked to be over a 100 years old, perhaps 200???
