I love how they allow food stalls to be in these areas. I wonder sometimes though if it wouldn't be better to have a somewhat more permanent fixture there, so the stall holders wouldn't have to go through so much work every time to setup their stalls.

That's an incredible amount of work each day- plus getting supplies, cleaning, accounting, and probably a hundred other things. Incredible- I wish them luck and I'd love to have lunch there!!

I wish here were food stalls like this where I live in Australia. I would eat there every day. It all looked amazing. The ladies worked very hard and deserve all the respect they receive. Awesome

屋台の移動と設置（組み立て）等の準備だけで相当時間を要すると思います。 閉店後の後片付けや洗いものに残飯の分別、英語での質問にありましたが、 屋台でも事業系ゴミとして個別に処理するのか、屋台でまとめて業者に依頼 しているのか気になるところですね。 また帰宅してからも翌日の仕込みもあるでしょうし、商品の発注や買い物 などの手間を考えると、遊んでいる暇などないと思います。 このような大変な仕事を笑顔でテキパキと熟すお二人には尊敬しかありません。 博多に行った際には今回見た美味しそうなメニューを是非味わってみたい と思いました。お身体を大切に日々頑張ってください＾＾

--- I remember when Okayama had yatai scattered around downtown, but they are all long gone. Now if I want to eat at one, I have to hop on a train and go to another city, so it requires some planning. It's good that Fukuoka rethought their plan of getting rid of them and has instead encouraged their growth over the last 10 years or so.
