I add one final step and thats to remove the strip of pin/y bones to make it truly "boneless" =)

Not counting the time to cut the head off the fish or to scale the fish and I know you're using a barrel scaler but you also have to clean that scaler so that should be time included. But it's a great video on how to butterfly them.
