ingredients for a traditional carbonara there is no question about whether they pair well with rice
and the result is even creamier than the original. If you’re looking for a twist on the classic

RISOTTO CARBONARA RECIPE:

INGREDIENTS:

150 g Guanciale 5,29oz. or pancetta, speck, cubed bacon
300 g Carnaroli rice 11oz. or Arborio rice
1 liter Vegetable stock 34oz. or chicken stock.
½ glass White wine
4 tbsp Pecorino cheese
½ Onion
50 grams Butter 1,76oz.
3 eggs
Salt and pepper as much as required
Extra virgin olive oil as much as required

    I found carnaroli years ago BUT couldn't find guanciale ANYWHERE so......I sought out and found some large, beautiful pork cheeks and cured them then aged them to dry. (I've had a lot of experience making bacon so the process is pretty much the same for curing). It's the BOMB! Love the new recipe! Thanks!!
