So basically MatPat made a video addressing the same idea. I guess we can conclude theory #2 (5:04) is the official theory, along with what I mentioned in the video it is also noted that Bonnie was chosen as he has 5 fingers used to play the base guitar that were required for burntrap. If Monty did destroy Bonnie, wouldn't Fazbear Entertainment chose to fix Bonnie and decommission Monty? It would make sense because Monty was the aggression. But if it was the other way around (Bonnie destroyed Monty) It would make sense for Fazbear Entertainment to fix Monty and decommission Bonnie. Think about it, Bonnie has always been the most aggressive since FNAF 1.

I think the reason we don't see bonnie in the game is because Steelwool and Scott wanted a character that represented strength for all the cutscenes (Monty holding the bucket) In conclusion i think bonnie was replaced by Monty because bonnie represents a Bunnie (weak) and Monty represents a alligator (Strength)
